Although mosaics traditionally are made of tile or glass, students in this fun new class will see that mosaics can also be made of edible materials to make a mouthwatering and appetizing piece of art.
In this one-day course, the pastry chef and mosaic artist Jennifer Rubinstein will begin with an inspiring and delicious digital presentation of edible mosaics from around the globe. She will discuss food offerings and alters, as well as mosaic party platters as well as presenting pastry terms as they apply to edible mosaics.
Actual examples of edible mosaics will be shown and different techniques will be presented to inspire the creation of mosaics that beg to be eaten! Instructor will discuss edible materials that can be used as "adhesives", possible "substrates" for edible mosaics, as well as other edible supplies to use to create temporary or long lasting pieces. Students will gain a working understanding of pastry materials such as pastillage, fondant and gum paste.
Students will utilize a variety of edible materials to create one large or multiple small portable pieces to take home and enjoy.
